Grilled Blueberry Lemon Pie

Yes, you can make a pie on the grill. And if you've never tried it, now is a good time as ever. Try this recipe from Eclectic Recipes this Mother's Day!

What you'll need:

  • Pie crusts, softened as directed on packaging
  • 1 (21 oz) can of blueberry pie filling
  • 1 cup fresh blueberries
  • Zest of one lemon
  • 3 tbsp. turbinado sugar
  • 2 tbsp. vegetable oil

What you'll do:

  • Heat your Fuego grill to 375° - 400°. Add vegetable oil to a large cast iron skillet and use a brush to completely coat the inside of the skillet with oil.
  • Line the skillet with one pie crust. Combine pie filling, fresh blueberries, and lemon zest, and mix well. Pour in the pie filling and spread out. Fold crust over.
  • Lay the remainder of the pie crust on top of the pie. This is where you get creative! We went with the traditional lattice top but you can try different designs. Eclectic Recipes has a fun, star-shaped top. If you want to go the simple route, simply place the whole pie crust on top fo the pie and cut vents to allow the filling to cook through. We recommend sticking to the double crust method; the Fuego's shape will distribute the heat evenly, just like an oven, creating a beautiful golden crust!
  • Brush the outside of the crust with olive oil and sprinkle with turbinado sugar.
  • Grill for 15 - 20 minutes, or until crust has browned. 

This recipe is delicious as is, but a scoop of vanilla ice cream or whipped cream makes it 10x better! 😉
