Grilled Veggies Ringing in the New Year Healthy Habits

Ringing in the new season of healthy eating? A new year means a new slate. Grilled vegetables are a great way to start. Eating veggies is a great trick to start your good habits. Scroll through for a simple grilled veggie recipe.

Ingredients:

2 onions

2 yellow squash

2 red peppers

2 green peppers

2 zucchini

1/4 cup plus 2 tablespoons olive oil

Salt and freshly ground black pepper

3 tablespoons balsamic vinegar

1 teaspoon chopped fresh basil leaves

Directions:

Heat your Fuego Grill to 350 degrees. Leave the lid closed so it heats up.

Brush the vegetables with 1/4 cup of the oil to coat lightly.

Sprinkle the vegetables with salt and pepper.

Working in batches, grill the vegetables until tender and lightly charred all over, about 8 to 10 minutes for the bell peppers,  yellow squash, zucchini, green peppers,  and onions.

Grill the vegetables until you see a grill mark, but be sure not to grill to burnt.

In a separate bowl, whisk the 2 tablespoons of olive oil, balsamic vinegar, basil leaves, and salt and pepper. Drizzle it all over the vegetables once taken off the grill and serve.
