Healthy Labor Day Grilling

Just because summer is coming to a close doesn’t mean you want or need to let your summer body go! One way to stay on the healthier side is always go with the veggies & leaner meats. Grill them all up for one appetizing meal or mix and match for just as much flavor and fulfillment! Keep the BBQ’s going and keep the waistline where you want it with these easy, healthy grilling recipes from Fuego Grills!

Grilled Zucchini with Lemon Salt

6 Zucchini
¼ cup olive oil
2 teaspoons salt, separate
1 teaspoon pepper
2 lemons

  1. Cut off tops & bottoms of zucchini and slice them into quarters, lengthwise.
  2. Place in a large plastic zipper bag. Drizzle in olive oil, 1 teaspoon salt, pepper & the juice of two lemons. Seal the bag and mix around until zucchini is coated.
  3. Heat grill to medium to medium-low heat. Place zucchini on grill and grill on all three sides. One nice & tender, remove from grill.
  4. Sprinkle 1 tablespoon salt on top of grilled zucchini and serve.

Greek Lettuce Wrapped Turkey Sliders

1 lb. lean ground turkey
⅓ cup chopped onion
1 tablespoon chopped fresh dill
1 clove garlic, minced
¼ cup chopped parsley
Salt & pepper

6 oz. greek yogurt
¼ cup chopped cucumber
2 tablespoons chopped red onion
1 tablespoon chopped fresh dill
2 tablespoons lemon juice
11 leaves of red leaf lettuce

  1. In a medium bowl, mix together all slider ingredients until combined. Form into 11 small patties.
  2. Heat grill to medium heat. Since they are sliders, you don’t want the grill too hot and burning the patties. Place patties on grill and cook 3-4 minutes on each side, or until cooked through.
  3. In a small bowl combine greek yogurt, cucumber, red onion, dill and lemon juice.
  4. Now put it all together! Place a slider on a piece of red leaf lettuce, top with Tzatziki sauce and wrap. Keep it together with a toothpick. Enjoy!
