Healthy eating habits are usually at the top of the list when it comes to new year’s resolutions. We picked our top 5 favorite vegetables and grilling tips from Good Housekeeping.

1. Bell Peppers

Remove seeds from 4 medium peppers. Cut into eighths, lengthwise. Grill 6-8 minutes per side. Toss with 1 tablespoon balsamic vinegar and 1 tablespoon capers.

2. Red or Yellow Onions

Cut 4 medium onions crosswise into 1/2 inch-thick slices. Grill 8-10 minutes per side. Sprinkle with 3 tablespoons of finely chopped roasted red peppers and 8 basil leaves, sliced.

3. Corn

Submerge 4 ears in husk in cold water for at least 15 minutes. Grill 25 minutes, turning occasionally. Remove husks and silk. Brush with 2 tablespoons melted butter and sprinkle with 1/8 teaspoons smoked paprika.

4. Eggplant

Cut 1 medium eggplant crosswise into 1/2 inch-thick slices. Grill 4-5 minutes per side. Drizzle with 1 tablespoon balsamic vinegar and sprinkle with 2 tablespoons chopped fresh mint.

5. Yellow Squash or Zucchini

Cut 4 medium squash into 1/2-inch-thick slices, lengthwise. Grill 5 minutes per side. Then toss with 1 teaspoon grated orange peel.

Aside from vegetables, you can grill other types of food that are high in protein such as chicken, shrimp, and seafood to stay healthy for the rest of 2018!
