The Best Barbecue Mexican Street Corn

We’re rounding up our favorite recipes from the Summer and this Barbecue Mexican Street Corn was at the top of our list. If you’re looking for something new, different and delicious to grill up this Labor Day weekend, we highly suggest adding this to your weekend menu.

Ingredients
6 ears of corn, shucked and cleaned
Chili powder
Smoked paprika
¼ cup mayo
⅓ cup grated cotija cheese
1 lime, for fresh lime juice
1 bunch of cilantro

Instructions

  1. Grill corn, rotating every few minutes. Make sure the kernels are a deep golden yellow and tender. This should take approximately 15 minutes.
  2. Remove corn from grill and let cool for a few minutes.
  3. Combine mayo, chili powder, paprika, and cheese in a bowl.
  4. Brush mixture onto corn and garnish with cilantro and lime juice. Enjoy!
