Grilled Pumpkin Bread Pudding with the Family

A fusion of traditional bread pudding and outdoor grilling


  • 6 cups of day-old bread cubes (such as challah or brioche)
  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 2 cups milk (whole or 2%)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice mix (or a blend of cinnamon, nutmeg, and cloves)
  • 1/2 cup chopped pecans or walnuts (optional)
  • A pinch of salt
  • Cooking spray or butter for greasing

For the Sauce:

  • 1/2 cup heavy cream
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract


Prepare the Grill:

Preheat your grill to medium heat. If you're using a charcoal grill, make sure the coals are covered with white ash.

Prepare the Bread Pudding:

In a large bowl, whisk together the pumpkin puree, sugar, milk, eggs, vanilla extract, pumpkin spice mix, and a pinch of salt until well combined.

Transfer the soaked bread mixture to the greased baking dish, spreading it out evenly.

Place the baking dish on the grill over indirect heat. Close the lid and let the bread pudding cook for about 25-30 minutes or until the pudding is set and the top is golden brown. Check occasionally to ensure even cooking.

While the bread pudding is grilling, prepare the sauce. In a small saucepan, combine the heavy cream and maple syrup. Heat over medium heat until the mixture is warm but not boiling. Remove from heat and stir in the vanilla extract.


Once the bread pudding is cooked, remove it from the grill and let it cool slightly. Drizzle the warm maple cream sauce over individual servings or serve it on the side.
