Ingredients

  • 4 large tomatoes
  • 1 red onion, peeled and halved
  • 2 jalapeno peppers (adjust to your preferred spice level)
  • 2 cloves garlic, peeled
  • 1 lime, juiced
  • 1/4 cup fresh cilantro leaves, chopped
  • Salt and pepper to taste
  • Olive oil

Directions

Preheat the Grill:

Preheat your grill to medium-high heat.

Prepare the Vegetables:

Brush the tomatoes, onion halves, jalapeno peppers, and garlic cloves with a bit of olive oil. This prevents sticking and adds a touch of flavor.

Grill the Vegetables:

Place the oiled vegetables on the grill. Grill the tomatoes, onion halves, and jalapenos until they develop grill marks and start to soften. The time will vary, but it's usually around 5-7 minutes. Turn them occasionally to ensure even cooking.

Grill the Garlic:

The garlic cloves will cook quickly, so keep an eye on them. Grill for about 1-2 minutes, just until they're lightly browned and fragrant.

Prepare the Salsa:

Once the vegetables are grilled to your liking, remove them from the grill and let them cool slightly. Peel the skin off the tomatoes if desired.

Blend the Ingredients:

In a food processor or blender, combine the grilled tomatoes, grilled onion, grilled jalapenos (seeds removed for less heat if desired), grilled garlic, lime juice, and chopped cilantro. Pulse until the mixture reaches your desired consistency. You can make it chunky or smooth, depending on your preference.

Season and Serve:

Taste the salsa and season with salt and pepper as needed. Adjust the lime juice and other seasonings according to your taste. Transfer the salsa to a serving bowl.

Chill and Enjoy:

Allow the flavors to meld by refrigerating the salsa for at least 30 minutes before serving. This lets the grilled flavors intensify and come together. Serve with tortilla chips, tacos, grilled meats, or any dish you'd enjoy with salsa.
