Grilled Pineapple Martini with Light Rum


  • 1 ripe pineapple, peeled, cored, and sliced into rings
  • 2 ounces light rum
  • 1 ounce pineapple juice
  • 1/2 ounce lime juice
  • Vanilla ice cream
  • Pineapple wedge and/or cherry for garnish (optional)


  1. Preheat your grill to medium-high heat.
  2. Place the pineapple rings directly on the grill and cook for 2-3 minutes on each side, or until grill marks appear and the pineapple caramelizes slightly.
  3. Remove the grilled pineapple from the grill and let it cool for a few minutes.
  4. Place a scoop of vanilla ice cream into a chilled martini glass.
  5. Arrange the grilled pineapple rings around the ice cream.
  6. In a small pitcher or measuring cup, mix together the light rum, pineapple juice, and lime juice.
  7. Pour the rum mixture over the ice cream and grilled pineapple in the glass.
  8. Garnish with a grilled pineapple wedge and/or a cherry if desired.
  9. Serve immediately and enjoy the tropical flavors with a touch of rum and creamy vanilla ice cream!
